The Kosher Framework
Kosher eating starts with which foods are permitted: land animals that chew their cud and have split hooves (beef, lamb), fish with fins and scales, and plant foods. Pork, shellfish, and certain other animals are not kosher. Meat must come from animals slaughtered according to kosher law (shechita) and carry kosher certification — look for a hechsher (certification symbol) on packaging.
Meat, Dairy, and Parve
A central practice is keeping meat and dairy separate: they are not eaten together, and many people wait a period between them (customs vary). Foods that are neither meat nor dairy — called parve — include fruits, vegetables, grains, eggs, and fish, and can be eaten with either. In practice this means planning meals as "meat meals" or "dairy meals," with separate cookware and dishes in stricter households.
Day-to-Day Eating Pattern
Build balanced plates within the framework: half vegetables and fruit, a quarter whole grains (brown rice, quinoa, whole wheat bread, barley), a quarter protein (kosher chicken, beef, turkey, fish, eggs, beans, lentils), plus healthy fats like olive oil, nuts, and avocado. Parve foods make flexible snacks — fruit, nuts, and hummus work with any meal.
Nutrients to Watch
Calcium deserves attention, since dairy is absent from meat meals — include yogurt, cheese, or fortified alternatives at dairy meals, plus leafy greens and almonds. Iron from kosher red meat and poultry is well absorbed; pair plant iron with vitamin C foods. Vitamin B12 comes mainly from animal foods, so varied kosher protein sources matter.

Batch-cook kosher proteins and grains to simplify the week. Certification symbols make shopping fast — learn the common ones.
